We’re really proud to present: The Filling Stick, A pre-formed filling that can be incorporated into bakery products without the need for a piping bag or machine!

In recent years, Ruitenberg Ingredients from Twello has developed an entirely new product: the Filling Stick. “A ready-to-use, pre-formed filling that bakers can incorporate into their final products,” says Arthur van Meerveld, Application Manager Bakery & Convenience. “Think of a filling made with cheese, meat, or vegetables that can be effortlessly used in puff pastry, laminated dough, or yeast dough. Based on our expertise, we’ve developed a technique to offer a liquid filling in a stick format. This makes it ideal and incredibly easy to process in bakeries, whether the filling is handled manually or on a production line.” 

 

Flavours, Colours, and Textures 

The Filling Sticks offer a wide range of applications. “You can create all kinds of fillings in various colours, flavours, and even textures. At the moment, we’ve developed three flavours: cheese, a plant-based filling for sausage rolls, and a quark filling for sweet snacks. But the possibilities are endless. Imagine a pizza filling, chicken curry, spinach-ricotta, or vegetable-based options. We can create a filling for virtually any flavour you can think of. If you’re looking for a distinctive filling using local ingredients, this concept offers a solution. We can adjust the viscosity to achieve the optimal eating experience.” The filling comes in a sausage-like shape and is available in various sizes. 

 

Innovation 

The concept has been in development at Ruitenberg for quite some time. “We are active in various industries, such as meat, confectionery, and bakery,” explains Esther van der Spek, Account Manager Bakery Benelux. “Sometimes techniques from different industries come together. What’s a common process in the meat industry, we’ve now applied to this bakery concept. This enables us to offer a liquid filling in stick form. How do we do it? That’s our company secret! It’s based on years of experience and fruitful crossovers within our R&D team. We are committed to continuously bringing innovations to the food industry and enjoy collaborating with our customers. With our products, we combine knowledge and ingredients to create creative solutions that work. If we can simplify or improve a process for our customers, we’re ready to help.” 

 

Flexibility 

“The Filling Stick is an ideal product for bakers who need or want to accomplish more with fewer staff,” says Van der Spek. “The sticks are delivered frozen and can be processed either frozen or thawed. Because the filling is perfectly portioned, there’s no waste of ingredients. Additionally, every employee uses the same amount of filling, ensuring a consistent final product.” 

Van der Spek also sees opportunities to experiment more within existing product ranges using the sticks. “You don’t need to purchase everything separately; instead, you can, for example, try a box of plant-based fillings to see how customers respond. The Filling Sticks have a shelf life of nine months, when frozen, comparable to other ready-to-use frozen products. This product lowers the barrier to try something new. You can also quickly switch between different fillings, allowing you to keep surprising your customers with your range.” 

Purchasing Filling Sticks doesn’t have to compromise your uniqueness. “Each baker uses their own dough or recipes, so every product tastes different. Moreover, we can provide tailor-made solutions, ensuring the filling is unique to your business. You can’t get more distinctive than that, can you?”
